1: 1963 Volkswagen Beetle.

The lower the better. Preferably that paint job, but a white 2-tone. With that roof rack. 1888cc engine (the biggest they made)
This was mine for quite some time:
1970 (67 fenders)

I bought it stock, threw some lowering suspension on it, tore off the fenders and threw on some 67 fenders, painted the body matte black with a hand-brushed purple hood and trunk, custom billet alumnium rims, and ended up selling it do to expenses. The re-wiring for the rebuilt engine became too much of a hassle.
2: 1963 Buick Riviera 455 big block
Voted one of the prettiest cars ever made. And I'm in love with this car. Probably the best looking classic car to date. And the 455 big block gives it such a nice grumble.

3: 1997 Subaru Impreza RS 2.5L Flat 6 twin turbo Rally Sport edition (not exported to the US)
The flat 6's were never released to the US. However, the 2.5L 4C naturally aspirated were released. They are beautiful cars, but I want the rally sport edition. The ones that were raced in the championships. I also want it in the classic RS blue. The flat 6 twin turbo charged engines are screamers.
